Chicken Rice A Clonee

"Daddy, what are you making for dinner?" David asked while watching a train video.

Pretty easy to lock up on that question. "Well what do you want?"

"I want Rice-A-Roni." Always the entree that we don't have...

"I think we're out but I'll see what I can do."

Sherry has been making her own "Mom-A-Roni" mix lately, and I'll tell you it's almost a dead-on equivalent to the real thing. But we're out of her mix. Out in the pantry I noticed we had lots of stuff, but no Rice-A-Roni. Then I noticed we had some ingredients that might make a good substitute. And with that, Chicken Rice-A-Clonee was born.

The recipe is pretty simple:

Ingredients
3/4 Cup Orzo-style pasta
1/2 Cup dry Calrose Rice
2 TBSP Butter
1 14.5 oz can of Chicken Broth

Directions
Melt butter in microwave, 15 - 18 seconds
Pour butter, Orzo and Rice into 12" skillet on high heat
With a spatula, move the mixture around in the butter until the some of the orzo starts to turn brown.
Pour chicken broth on top of mixture and bring to boil
Set temperature to Low; cover and simmer for 20 minutes

And that's it. The result is mildly seasoned, so if you want it to have some kick just add whatever spice you're into along with all the other stuff before you simmer. It probably cost more than a box of Chicken Rice-A-Roni, but you're not always going to be well stocked on that product so it's nice to have "an out."

And how did David like it? "But I wanted Noodles." He didn't eat any, which leaves more for my lunch tomorrow!
